Compost Kraut: Fermentation as Food Waste Solution & Climate Action

About the Class

Sam Paone from Golden State Pickle Works & Collective Cultures will lead this hands-on workshop, guiding participants through the process of making a colorful, probiotic-rich kraut. This class will focus on using bumper crops, kitchen scraps, and edible cover crops from the summer growing season.

“Compost Kraut” highlights the power of fermentation to reduce food waste, support climate-resilient farming, and preserve abundance in a low-energy, low-waste way. The program connects fermentation with regenerative agriculture, circular food systems, and zero-waste living. Ingredients will be local + seasonal.

In this class you will learn:

  • How to make a brined, scrap-based kraut safely and successfully
  • How edible cover crops support soil health and can be used in food
  • How fermentation reduces waste and energy use
  • How traditional food preservation contributes to climate resilience
  • Take-home kraut jar + zero-waste fermentation guide/recipe

About your Instructor

Sam Paone

Golden State Pickle Works owner and founder Samantha Paone is on a mission — to teach others the value, health and simplicity of food preservation. “Some people are so uncomfortable with the idea of making their own food, especially something that’s full of bacteria,” said Paone, who started her Sonoma-based business in 2014. “So my idea is to show just how simple it is and that you really can do this.” Paone’s 15-year career in the restaurant industry led her to become fascinated with the process of pickling and preserving foods.”

After 10 years of selling her products at area farmers markets, Samantha is now starring in “Jarring Everything,” a brand new cooking show on Eat This TV that focuses on how to make pickling and preserving food more accessible to wider audiences. Food isn’t just what we eat-it’s a bridge between the past and the present, a way to honor tradition, and a source of inspiration for the future. “Jarring Everything” is a passion project born from the belief that the art of preserving food tells stories that connect us to our roots, our communities, and the people we love.

zero waste week 2025

For Fall 2025, we have partnered with Zero Waste Sonoma to bring you Zero Waste month and an October packed with free/by donation events and workshops. Zero Waste Week is a grass-roots approach to raise awareness about the environmental impacts of waste and ways to live a more zero waste lifestyle. Throughout the week, groups around the North Bay Area demonstrate how they are part of the solution through public education events and activities that focus on reducing, reusing, recycling, repurposing and composting.

Class FAQ

We ask that you notify us at least 10 days in advance of a class if you need to cancel your registration. You may cancel by phone or email and we will gladly offer you a refund or credit toward a future class. If you cancel with less than 10 days’ notice, we will not be able to provide refunds, due to our contractual obligations and material purchases for each class.

Sometimes, the Sonoma Community Center has to cancel a class due to low enrollment or unforeseen circumstances, such as a natural disaster or health emergency. If this happens and we do not offer a reschedule date, you will be refunded 100% of your registration fee (minus the payment processing and services fee), or credit towards a future class. If we are able to offer a reschedule date but you are unable to make the new date, we will gladly offer credit towards a future class.

All credits must be used within 1 year.

  • Welcomes participants from beginning through advanced. Instructor provides a balanced and flexible curriculum suitable for participants with any level of experience.
  • Beginning
  • Participant has little to no experience with this medium and needs or expects guidance at every step during the class. Participant wants to learn about materials, techniques, and vocabulary of the medium.
  • Intermediate
  • Participant is comfortable with the medium and expects both guidance and time to work alone with the medium.
  • Advanced
  • Participant is very confident with all aspects of the medium. Participant is self-motivated; ready to experiment and develop their artistic voice.

Late additions to any program, class, or workshop that has already begun will be allowed on a per-case basis depending upon the Program Director & instructors approval. Late additions will have to pay the full registration cost of the class, along with any materials fees, and will not be prorated for the time missed.
