Classic and whole wheat all butter pie dough workshop

Learn how to make flaky and versatile all-butter pie dough with whole wheat option for your favorite seasonal sweet dessert or savory dish.

About the Class

Making flaky pie dough seems to be a step that home bakers are hesitant about and tend to rely on store-bought pre-rolled pie crust. If you found yourself in that situation, this hands-on class is for you. In this class, we will learn various effective mixing, rolling, and shaping techniques to create flaky all-butter pie dough without using shortening. We will learn how to incorporate locally grown whole-grain flour into the pie dough for deeper flavor and health benefits. We will discuss seasonal ingredients and different shapes we can use to make sweet and savory pies/galettes to feed a family meal or a party.

Each participant will make 2 pie doughs (one with AP flour and one with whole grain flour included). We will roll and shape one dough, and each participant can take home the other one. Depending on timing, we can decide if we want to fill and bake with prepared fillings. We will bake a savory veggie party galette for our dinner snack.


About your Instructor

Hien Pham

Starting as a passionate cottage baker who bakes bread and pastries in her home kitchen for her community in Santa Rosa, Hien Pham is an artisanal baker with a deep respect for whole grain, seasonal ingredients, traditional techniques, and natural, slow fermentation. She loves to support local farmers and connect with people through food.

She is currently pursuing a baking and pastry certificate at the Culinary program at Santa Rosa Junior College. Currently, she is working at  Quail and Condor and Troubadour to expand her knowledge and skills in baking.

Hien believes good food starts from the home kitchen and is looking forward to connecting with people in Sonoma.

Class FAQ

We ask that you notify us at least 10 days in advance of a class if you need to cancel your registration. You may cancel by phone or email and we will gladly offer you a refund or credit toward a future class. If you cancel with less than 10 days’ notice, we will not be able to provide refunds, due to our contractual obligations and material purchases for each class.

Sometimes, the Sonoma Community Center has to cancel a class due to low enrollment or unforeseen circumstances, such as a natural disaster or health emergency. If this happens and we do not offer a reschedule date, you will be refunded 100% of your registration fee (minus the payment processing and services fee), or credit towards a future class. If we are able to offer a reschedule date but you are unable to make the new date, we will gladly offer credit towards a future class.

All credits must be used within 1 year.

  • Beginning
  • Participant has little to no experience with this medium and needs or expects guidance at every step during the class. Participant wants to learn about materials, techniques, and vocabulary of the medium.
  • Intermediate
  • Participant is comfortable with the medium and expects both guidance and time to work alone with the medium.
  • Advanced
  • Participant is very confident with all aspects of the medium. Participant is self-motivated; ready to experiment and develop their artistic voice.

Late additions to any program, class, or workshop that has already begun will be allowed on a per-case basis depending upon the Program Director & instructors approval. Late additions will have to pay the full registration cost of the class, along with any materials fees, and will not be prorated for the time missed.
