Seasonal Cake Demo: Carrot Cake

This is a DEMO STYLE class, part of a monthly series highlighting the seasons! You’ll follow along with me as I make a Carrot Cake from start to finish. This cake will be filled with a tart curd, delicious jam, and frosted in ermine frosting. Ermine frosting is a vintage recipe originally used on Red Velvet cake before cream cheese. It is light, airy, and less sweet; the perfect pairing for this carrot cake. It will be your new favorite go to recipe! I will also be showing you how to highlight whole grains and seasonal ingredients here.

You will learn all the tips and tricks to mix, bake, build, frost, and decorate a cake in your own kitchen. Don’t like carrot cake? I will walk you through variations and we all can share in the creative process together!

Snacks and beverages will be provided. I will have printed recipes for you to reference and take notes throughout the class. At the end of class we will enjoy a slice of cake and a take home gift! Along with the recipes you will get a dry cake mix kit highlighting Farmer Mai Flour in Sebastopol as well as a bundle of locally grown carrots from Hopland Heirloom Farm so that you can recreate what you’ve learned at home!

​I am a professional pastry cook and baker who believes the best way to connect is through something made by hand. My own culinary journey began as a self-taught learner, which gives me a unique perspective on how to break down complex skills effectively. Having worked in fine-dining pastry departments and award-winning bakeries, I now focus on bridging the gap between professional technique and the home kitchen.

​Because I started exactly where you are, I find so much joy in helping students break through technical barriers and grow their confidence. I am a firm believer in staying in a ‘student mindset’. I view class as a collaborative space where we can all learn from one another. I can’t wait to see what we create together!

Through teaching, I now focus on bridging the gap between professional technique and the home kitchen.

We ask that you notify us at least 10 days in advance of a class if you need to cancel your registration. You may cancel by phone or email and we will gladly offer you a refund or credit toward a future class. If you cancel with less than 10 days’ notice, we will not be able to provide refunds, due to our contractual obligations and material purchases for each class.

Sometimes, the Sonoma Community Center has to cancel a class due to low enrollment or unforeseen circumstances, such as a natural disaster or health emergency. If this happens and we do not offer a reschedule date, you will be refunded 100% of your registration fee (minus the payment processing and services fee), or credit towards a future class. If we are able to offer a reschedule date but you are unable to make the new date, we will gladly offer credit towards a future class.

All credits must be used within 1 year.

  • Welcomes participants from beginning through advanced. Instructor provides a balanced and flexible curriculum suitable for participants with any level of experience.
  • Beginning
  • Participant has little to no experience with this medium and needs or expects guidance at every step during the class. Participant wants to learn about materials, techniques, and vocabulary of the medium.
  • Intermediate
  • Participant is comfortable with the medium and expects both guidance and time to work alone with the medium.
  • Advanced
  • Participant is very confident with all aspects of the medium. Participant is self-motivated; ready to experiment and develop their artistic voice.

Late additions to any program, class, or workshop that has already begun will be allowed on a per-case basis depending upon the Program Director & instructors approval. Late additions will have to pay the full registration cost of the class, along with any materials fees, and will not be prorated for the time missed.
