Sold Out – Artisan Focaccia Workshop

Learn to make artisan sourdough focaccia with natural fermentation, whole grains, and seasonal toppings. Take home dough and starter to bake!

What you’ll do

Focaccia is the best suited for homebakers who want to make bread at home. Join Hien Pham, a member of the bread teams at Quail and Condor and Troubadour Bread, for this hands-on experience that will guide you through basic knowledge of the natural slow fermentation process using sourdough starter to create nourishing bread for your daily meal with seasonal ingredients.

As you learn to mix, knead, fold, and shape, you will start to gain a connection with your dough and how gluten works to create fluffy focaccia bread. With her passion for whole grains honed at local artisan bakeries, Hien will guide you on how to incorporate whole grains into your flour mix to make your focaccia more hearty and wholesome. We will cover what seasonal ingredients would be best to top the focaccia and what to avoid. You will get to taste focaccia and a side salad for lunch, and bring home some dough to bake the next day, now that you know what to do and a starter for your next sourdough baking adventure.


About your Instructor

Hien Pham

Starting as a passionate cottage baker who bakes bread and pastries in her home kitchen for her community in Santa Rosa, Hien Pham is an artisanal baker with a deep respect for whole grain, seasonal ingredients, traditional techniques, and natural, slow fermentation. She loves to support local farmers and connect with people through food.

She is currently pursuing a baking and pastry certificate at the Culinary program at Santa Rosa Junior College. Currently, she is working at  Quail and Condor and Troubadour to expand her knowledge and skills in baking.

Hien believes good food starts from the home kitchen and is looking forward to connecting with people in Sonoma.

Class FAQ

We ask that you notify us at least 10 days in advance of a class if you need to cancel your registration. You may cancel by phone or email and we will gladly offer you a refund or credit toward a future class. If you cancel with less than 10 days’ notice, we will not be able to provide refunds, due to our contractual obligations and material purchases for each class.

Sometimes, the Sonoma Community Center has to cancel a class due to low enrollment or unforeseen circumstances, such as a natural disaster or health emergency. If this happens and we do not offer a reschedule date, you will be refunded 100% of your registration fee (minus the payment processing and services fee), or credit towards a future class. If we are able to offer a reschedule date but you are unable to make the new date, we will gladly offer credit towards a future class.

All credits must be used within 1 year.

  • Welcomes participants from beginning through advanced. Instructor provides a balanced and flexible curriculum suitable for participants with any level of experience.
  • Beginning
  • Participant has little to no experience with this medium and needs or expects guidance at every step during the class. Participant wants to learn about materials, techniques, and vocabulary of the medium.
  • Intermediate
  • Participant is comfortable with the medium and expects both guidance and time to work alone with the medium.
  • Advanced
  • Participant is very confident with all aspects of the medium. Participant is self-motivated; ready to experiment and develop their artistic voice.

Late additions to any program, class, or workshop that has already begun will be allowed on a per-case basis depending upon the Program Director & instructors approval. Late additions will have to pay the full registration cost of the class, along with any materials fees, and will not be prorated for the time missed.
