Under expert guidance, you’ll learn to create maki (traditional rolled sushi) and temaki (hand rolls), working with fresh fish, vegetables, and traditional fillings. We’ll cover essential techniques including rice preparation, rolling methods, and proper knife skills.

Whether you’re a complete beginner or looking to improve your technique, you’ll leave with the confidence to host your own sushi night. All ingredients, tools, and recipes provided.

About your Instructor

Ed Metcalfe

My culinary career started at age 15 washing dishes in my parent’s restaurant. My career has taken me to SF, Lake Tahoe, Copenhagen Denmark, Hawaii, Bend Oregon, and Sonoma, Ca. For the better part of 15 years, I have opened and run my restaurants. I am passionate about everything from the design aspect to building a menu and developing a culinary team.

After the 2017 Sonoma fires, I was ready for a change. I sold my restaurant ( Shiso) and started our catering company, www.sushimotos.com.

You may cancel by phone or email and we will gladly offer you a refund or credit toward a future class. If you cancel with less than 10 days’ notice, we will not be able to provide refunds, due to our contractual obligations and material purchases for each class.

If this happens and we do not offer a reschedule date, you will be refunded 100% of your registration fee (minus the payment processing and services fee), or credit towards a future class. If we are able to offer a reschedule date but you are unable to make the new date, we will gladly offer credit towards a future class.

All credits must be used within 1 year.
