About the Class

Immerse yourself in the warm, comforting flavors of Milan with this relaxed hands-on cooking class focused on traditional Lombardy cuisine. Using simple ingredients and time-honored techniques, you’ll create an authentic four-course Milanese meal that showcases the elegant simplicity of northern Italian cooking, complemented by wine pairings throughout the evening.

Begin with bresaola paired with peppery arugula and shaved Parmigiano-Reggiano, a classic antipasto that balances delicate cured beef with fresh, bright flavors. Learn the art of ossobuco alla Milanese, braising veal shanks until they’re fall-off-the-bone tender in a rich tomato and white wine sauce. Master the traditional gremolata garnish that adds brightness to this hearty dish.

Create the iconic risotto alla Milanese, understanding the patient stirring technique and precise timing that produces creamy, al dente rice infused with saffron’s golden color and distinctive flavor. You’ll learn why this risotto is the perfect accompaniment to ossobuco and how to achieve restaurant-quality results at home.

Finish with the simple elegance of ripe pears served with creamy gorgonzola, a classic Italian pairing that’s both rustic and refined. This relaxed class emphasizes technique over complexity, giving you the confidence to recreate these Milanese classics for family gatherings and special occasions.

About your Instructor

Chef Maria Teresa Capdevielle

Maria Teresa Capdevielle is the author of “The Secrets of Baking with Olive Oil,” a professional pastry chef and a culinary chef/instructor from Abruzzo (Italy). She graduated from the California Culinary Academy in 2003 and did her internship at the famed Chez Panisse in Berkeley, where she learned about hand-selecting and gently preparing perfect produce. Her local experience includes V-Sattui, The Rose Pistola, The Waterfront, The Market Hall, The Townhouse Grill & Restaurant and V. Sattui Winery. She also teaches classes in-person and online at culinary centers in the SF Bay Area and at Milk Street in Boston, and consults for small restaurants and wineries to help them develop their dessert menu and train their teams.

Class FAQ

We ask that you notify us at least 10 days in advance of a class if you need to cancel your registration. You may cancel by phone or email and we will gladly offer you a refund or credit toward a future class. If you cancel with less than 10 days’ notice, we will not be able to provide refunds, due to our contractual obligations and material purchases for each class.

Sometimes, the Sonoma Community Center has to cancel a class due to low enrollment or unforeseen circumstances, such as a natural disaster or health emergency. If this happens and we do not offer a reschedule date, you will be refunded 100% of your registration fee (minus the payment processing and services fee), or credit towards a future class. If we are able to offer a reschedule date but you are unable to make the new date, we will gladly offer credit towards a future class.

All credits must be used within 1 year.

  • All Levels
  • Welcomes participants from beginning through advanced. Instructor provides a balanced and flexible curriculum suitable for participants with any level of experience.
  • Beginning
  • Participant has little to no experience with this medium and needs or expects guidance at every step during the class. Participant wants to learn about materials, techniques, and vocabulary of the medium.
  • Intermediate
  • Participant is comfortable with the medium and expects both guidance and time to work alone with the medium.
  • Advanced
  • Participant is very confident with all aspects of the medium. Participant is self-motivated; ready to experiment and develop their artistic voice.

Late additions to any program, class, or workshop that has already begun will be allowed on a per-case basis depending upon the Program Director & instructors approval. Late additions will have to pay the full registration cost of the class, along with any materials fees, and will not be prorated for the time missed.
