Decorative Fruit Tart Workshop

Take home: A variety of mini tartlets decorated by you in class, recipes with step-by-step instructions to recreate at home, accompanied by an 8” whole grain baked tart shell and local fruit to get you started!

Have you ever looked into a pastry case to see beautifully adorned fresh fruit tarts and wondered how they are made? Well, look no further! In this class I will walk you through all the steps to make stunning fruit tarts.

Leaning into early Fall season we will be making poached pear and pear butter tartlets using intensely floral pears from Little Saint Farm, beautifully sweet fresh figs paired with a fig leave pastry cream, and a nice bright zingy citrus curd to round it all out and give you a good range of skills to work with.

We will be working with Pate Sucree, a sweet and delicate pastry dough that has many applications. To add depth of flavor and wholesome nutrition I will be adding locally grown and milled whole grain flour from Farmer Mai in Sebastopol.

Food and Beverages will be provided and after class you will take home the mini tartlets decorated in class, as well as a full 8” tart shell and local Little Saint Pears to get you started at home!

With all of the skills you learn in this class you can really mix and match recipes to build your own creations! Come to connect, make edible art, and have a good time!

​I am a professional pastry cook and baker who believes the best way to connect is through something made by hand. My own culinary journey began as a self-taught learner, which gives me a unique perspective on how to break down complex skills effectively. Having worked in fine-dining pastry departments and award-winning bakeries, I now focus on bridging the gap between professional technique and the home kitchen.

​Because I started exactly where you are, I find so much joy in helping students break through technical barriers and grow their confidence. I am a firm believer in staying in a ‘student mindset’. I view class as a collaborative space where we can all learn from one another. I can’t wait to see what we create together!

Through teaching, I now focus on bridging the gap between professional technique and the home kitchen.

We ask that you notify us at least 10 days in advance of a class if you need to cancel your registration. You may cancel by phone or email and we will gladly offer you a refund or credit toward a future class. If you cancel with less than 10 days’ notice, we will not be able to provide refunds, due to our contractual obligations and material purchases for each class.

Sometimes, the Sonoma Community Center has to cancel a class due to low enrollment or unforeseen circumstances, such as a natural disaster or health emergency. If this happens and we do not offer a reschedule date, you will be refunded 100% of your registration fee (minus the payment processing and services fee), or credit towards a future class. If we are able to offer a reschedule date but you are unable to make the new date, we will gladly offer credit towards a future class.

All credits must be used within 1 year.

  • Participant has little to no experience with this medium and needs or expects guidance at every step during the class. Participant wants to learn about materials, techniques, and vocabulary of the medium.
  • Intermediate
  • Participant is comfortable with the medium and expects both guidance and time to work alone with the medium.
  • Advanced
  • Participant is very confident with all aspects of the medium. Participant is self-motivated; ready to experiment and develop their artistic voice.

Late additions to any program, class, or workshop that has already begun will be allowed on a per-case basis depending upon the Program Director & instructors approval. Late additions will have to pay the full registration cost of the class, along with any materials fees, and will not be prorated for the time missed.
